Roots on a Platter

During an exhibition at Galleri Møntergade 6 in June 2025, I made a participatory installation where I let botanical science met culinary art. Viewers could experience the fundamental relationship between humans and plant-based sustenance through three home-made cookie varieties – edible interpretations of root systems.

I drew inspiration from the meticulous documentation found in the ‘Wurzel Atlas’ – a seminal collection of root system illustrations compiled by the professors Erwin Lichtenegger and Lore Kutschera in Austria. This botanical reference material was the aesthetic guidance for the project.

The presentation table was part ‘platter’ part artwork, with three hand-drawn table runners depicting my interpretation of root structures of specific species: Broad bean (Vicia faba), Wheat (Triticum aestivum), and Birdsfoot trefoil (Lotus corniculatus).
